Coffee roasting is an interactive process between a Roaster, a machine, and a batch of coffee. This involves a human element of observation and control over the transformation of a raw seed to a roasted coffee bean. You are manipulating an environment of heat and air according to how the coffee is developing. The more a Roaster knows their machine and roasting development, the more they can interact with the coffee to balance the levels of body and acidity with sweetness, nuance, and subtlety. Like any artist, as we continue to learn, grow, and dream- our work evolves. The coffee origins, varietals and roasting will continue to change, but the desired satisfaction remains.
